My Galentines Pancake Day 2018

I know I've been super lacking in posts recently, uni work and life has honestly just been super hectic and I know this is a little late but I still wanted to share with you however I spent my Valentines Day.
Me and a couple of girlfriends got together and decided to combine Valentines Day and pancake day for our own chill out time to make homemade pancakes.
Here I thought I'd let you know how it went and the recipe we used for our 2 different pancake mixes.

Our 'proper' pancake recipe:
  • 100g plain flour
  • 2 large eggs
  • 300ml milk
  • Your choice of toppings
So as you can see this recipe is super simple and involves 3 main ingredients and whatever toppings you choose to have for yourself. We found that this made around 5 crepe-type pancakes and they were super yummy, my personal choice of toppings for these pancakes was nutella and sliced banana.
Tip: Personally I think it might be extra yummy if some vanilla extract (or something similar) was added just for extra flavour.

Our second recipe was for thick banana panckes:
  • 100g plain flour
  • 1 banana, mushed (although we only used around 3/4 of the banana in the end)
  • 300ml milk
  • Your choice of toppings

We decided to make these because we found that between the three of us five crepe-like pancakes weren't enough however we didn't have enough eggs. These pancakes are a lot smaller and thicker than the other ones and again this made about 5 pancakes.
Personally I prefer normal pancakes to banana pancakes however these were honestly not too banana-esque at all, and again I think that adding something like vanilla extract would make it extra tasty. 
My choice of topping for this pancake was some golden syrup.

I really enjoyed doing this with my friends as they're both in relationships but aren't able to see their boyfriends and it was nice to just spend the day together and do something.
And obviously it fell on a Wednesday so it was still part of the Weekly Wednesday tradition.
